Powder to make vanilla custard. Also used to make water cream for mixing in butter creams, and as starch and flavouring for certain shortbread doughs and meringues.
Usage
Milk 1000g, sugar 120g, cream powder 90 g. 2/3 of the milk is boiled, the rest is mixed with the creampowder and sugar, which is to be stirred into the boiling milk. The whole mixture is to be brought to a rapid boil. For water cream the milk is replaced with water.
