Värmlandsbas is a coarser bread base with whole grain rye flour, rye kernels and sourdough for medium coarse breadtypes. Contains cut rye kernels, wheat sprouts, whole grain rye flour and sour dough.

Usage

Dark country style bread, rye brea. 44% dosage on flour weight. Recipe: 1000g water, 800g Extra bakery flour, 800g Värmlandsbas, 250g dark brown syrup, 200g sifted rye flour, 80g yeast. Dough temperature: 27 °C. Measure the Värmlandsbas and mix with the water. Let the mixture rise while the other ingredients are measured. Blend all ingredients for 2+9 minutes. Rest time: 20 minutes. Shape in wanted size (bread 600g / baguettes 400g / buns 70g). Let rise in cabinet and bake.
