Rågger is a bread base of rye with sourdough and seeds for making darker bread. Contains sourdough, sunflower kernels and malted rye flakes.

Usage

35% dosage on the flour weight. 1000g water, 1000g Extra bakery flour, 700g Rågger, 300g sifted rye, 200g dark brown syrup, 70g yeast. Dough temperature: 27 degrees C. Blend all ingredients 2+6 minutes. Rest time: 20 minutes. Make the wanted size (bread 600g / baguettes 400g / buns 70g). Let rise in cabinet and bake.
