Tegral Scones 15 kg

Tegral Scone mix: 1 kg, water: 420 g. Place Scone Mix in a bowl fitted with a beater. Add water and mix on slow speed for 30 seconds. Mix on medium speed for 20 seconds. Round to a smooth surface, cover and rest for 10 minutes. Roll out, and cut into desired shape. Place onto silicone lined trays and egg wash. Rest for 20 minutes at ambient before baking. Bake at 230°C for 9-11 minutes.
