Description

Baker’s yeast consists of living cells of Saccharomyces cerevisiae. KronJäst Dry yeast for Lean Dough is a Swedish dry baker’s yeast. The dry yeast is an Instant Dry Yeast (IDY), it is dried in such a way that rehydration step in dough liquid isn’t necessary. Recommended for low sugar doughs, with the amount of sugar of maximum 4% of the amount of flower.

Usage

Baker’s yeast is used in fermented doughs to give volume, texture and aroma. Yeast cells produce gas (carbon dioxide), alcohol, aromatic compounds and flavor precursors from the sugars present in the dough. The expanding gas alveolis are captured in the doughs protein (gluten) matrix, which after baking, results in a light, low density and stabilized product.
