Petit choux mix tastes like petit choux made in the traditional way, with consistent quality, high volume, and stability.

Usage

Preparation: 1000 g Choux Pastry Mix and 1500 g water 40-50°C. Add and mix for approx. 3 minutes at medium speed. Rack oven: Alt. 1) Bake approx 25 min. at 230°C, 15-20 sec. steam in the beginning, damper open ¼ after 10 min.(increase in volume of 3½-4 times). Alt. 2) Bake approx 30 min. at 210°C,damper open ¼ (increase in volume of 3 times).
