A purified, dried glucose syrup obtained by hydrolysis of starch. It is a white to light yellow powder with a moderate sweet taste and typical odour.
Usage
Dried glucose syrup can be used for ice cream production.
Dried glucose syrup dissolves easier than for example dextrose and fulfills the same function as invert sugar by preventing recrystallization of the regular sugar. The sugar content is 95% in sweetness compared to K5.
When replacing glucose syrup with dried glucose syrup, keep in mind that glucose syrup contains about 20% water.
