2/2.....Side effect can be that yeast cells also produce some gas (carbon dioxide) from the sugars/starch present in the applied product, if let to proof for an appropriate time. The gas is captured, if used in a gluten rich dough, and results in a volume increase and light texture. This light texture is fixed in the baking process. Yeast cells die when heated above 50°C.
