1kg egg white powder for 10 kg of water. When used for biscuits and similar products it is recommended to use 1,4 kg of egg white powders for 10kg of water.
OBS! Always dissolve the egg white powder first. Use 1 part of powder and 1 part water (and if possible, 1 part sugar) to a porrige, thereafter add the rest of the water.
